Summer Corn Salad

Ingredients

olive oil

tbsps
fresh lime juice
Salt and pepper
to taste
2
cups
corn kernels or 3 ears corn
boiled or grilled
3
plum tomatoes
seeded and diced
2
scallions
finely chopped
1
small red onion
diced
Chopped parsley
for garnish
Instructions
In a large bowl, whisk together olive oil and fresh lime juice. Season with salt and pepper to taste.
Add remaining ingredients to the bowl and toss until well combined. Let sit for at least 30 minutes. Serve cold or at room temperature.
