Easy California Crunchy Sushi Roll Recipe

Learn how to make a delicious California Crunchy Sushi Roll at home with crispy panko breadcrumbs, creamy avocado, cucumber, and imitation crab for a fun and flavorful sushi experience.

Ingredients

For the Sushi Rice:

  • 1 ½ cups sushi rice preferably short-grain or medium-grain
  • 1 ¾ cups water
  • 2 tbsp rice vinegar
  • 1 tbsp sugar
  • 1 tsp salt

For the Sushi Roll:

  • 10 sheets nori seaweed
  • 1 ripe avocado sliced
  • ½ cup imitation crab shredded
  • 1 cucumber julienned
  • ¼ cup panko bread crumbs toasted

Instructions

  • Rinse the sushi rice under cold water until the water runs clear to remove excess starch. Cook the rice according to the rice cooker's instructions, using 1 ¾ cups of water. Once the rice is cooked, transfer it to a large bowl and gently stir in the rice vinegar, sugar, and salt using a wooden spoon or rice paddle. Let the rice cool to room temperature.
  • In a small pan over medium heat, add the panko bread crumbs. Toast them lightly for 2-3 minutes, stirring constantly to prevent burning. Once golden brown, remove from heat and set aside.
  • Lay a sheet of nori seaweed on a bamboo sushi mat with the shiny side facing down. Wet your hands with a small bowl of water to prevent the rice from sticking. Spread an even layer of sushi rice on the nori sheet, leaving about 1 inch at the top edge to seal the roll. Flip the nori sheet over so that the rice is on the bottom side. Arrange a few slices of avocado, julienned cucumber, and shredded imitation crab horizontally across the center of the nori.
  • Carefully lift the edge of the bamboo mat closest to you and begin rolling the sushi tightly. Roll it towards the top edge of the nori. Once you reach the top, wet the edge of the nori with a little water to seal the roll. Using a sharp knife, slice the roll into 6-8 pieces. Clean the knife with a damp cloth between slices to keep it neat After slicing, sprinkle the toasted panko bread crumbs on top of each sushi piece for a crunchy finish.
  • Serve the California Crunchy Sushi Rolls immediately with soy sauce, wasabi, and pickled ginger on the side.
