Carrot Cake Oatmeal with Maple Yogurt Frosting

old fashioned oats

milk or water
1/2

grated carrots

tbsps
raisins
2
tbsps
maple syrup
1/2
tsp
cinnamon
1/8
tsp
nutmeg
Pinch
of salt
1/2
cup
Greek yogurt
1
tsp
maple syrup
1/4
cup
chopped walnuts
pecans, or pumpkin seeds
Instructions
In a medium saucepan over medium high heat, combine oats, milk, grated carrots, raisins, maple syrup, cinnamon, nutmeg, and a pinch of salt.
Cook until the mixture has thickened up, about 8 minutes, stirring frequently.
Divide oatmeal into two bowls and top with Greek yogurt mixed with maple syrup and chopped nuts. Serve warm.
