Baileys Irish Cream Chocolate Brownie Cookies

These Baileys Irish Cream Chocolate Brownie Cookies are rich and fudgy with the taste of Baileys Irish Cream. They are everything you love about brownies but in cookie form!

Ingredients

  • 1/2 cup unsalted butter melted
  • 1 egg
  • 2 tsp vanilla
  • 1/4 cup white sugar
  • 3/4 cup light brown sugar
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsweetened cocoa powder
  • 1 1/3 cups all purpose flour
  • 1/3 cup Baileys Irish Cream baking chips

Instructions

  • Preheat oven to 350F. Line cookie sheets with parchment paper.
  • In a mixing bowl, whisk together melted butter, egg, vanilla, while sugar, and brown sugar.
  • Add the baking powder, salt, cocoa powder, and flour. Stir until a dough forms and fold in the baking chips.
  • Scoop out 1-2 tablespoonful of dough with a cookie scoop, press lightly to flatten a bit, and place onto prepared baking sheets.
  • Bake for 10-12 minutes until the cookies are set around the edges and still soft in the centers.
  • Allow to cool on the cookie sheet for 10 minutes before transferring to wire racks to cool.
