Asparagus Gruyere Frittata

asparagus
tough ends trimmed off, cut into 1-inch pieces

large eggs

heavy cream

Gruyere cheese
shredded, divided
1/2
tsp
salt
1/4
freshly ground black pepper
Instructions
Preheat oven to 350F.
Heat oil in an 8-inch ovenproof pan. Saute onions until soft and translucent, about 5 minutes. Add asparagus and cook for an additional 5 minutes.
In a mixing bowl, whisk together eggs, cream, 3/4 cup of cheese, salt, and pepper. Pour the mixture into the pan.
Sprinkle remaining 1/4 cup of cheese on top and bake frittata for 30-35 minutes until the eggs are set. Cut into wedges and serve.
