I am so excited to share something a little different today… my very first “What I Ate Wednesday” post! A few of you commented on my What I Ate post last week and wrote to me wanting to hear more about what I eat as a food blogger, so I decided to give it a go. Here it is:
Breakfast was a fluke. I forgot to bring the overnight oats I made last night, so this morning I picked up a bagel from the work cafeteria instead. My usual modus operandi: toasted whole wheat bagel with vegetable cream cheese. This one has freshly grated carrots, chopped celery, and chopped radishes in it, which makes the spread extra crunchy!
Lunch was this Pad See Ew inspired noodles I threw together quickly and devoured after my workout last night. That’s beef, Chinese broccoli, and noodles stir fried with garlic, oyster sauce, soy sauce, and a touch of sugar. I couldn’t find wide rice noodles at the store, so I ended up using udon noodles – it’s just as delicious!
Later in the afternoon, I had two hour-long meetings back-to-back (so exhausted afterwards) and as soon as they were over, I was in need of a snack to tide me over until dinner time. I ate one of these Gingerbread Bars (which is basically a dessert bar) that Lara Bar sent me to try out. Short ingredient list, 190 calories, and 4 g of protein — triple win!
Not that it needs any adornment, but did you know that you can bake them into cookies?
And we finally got our first snow of the year! I looked out the window at around 3pm and there was already a light dusting on ground. Going home was a bit messy to say the least — that’s Columbus Circle by the way.
Today is supposed to be a rest day (I ran 4 miles yesterday!) but I’m determined to keep holiday weight gain at bay so I went to the gym and put in some time on the treadmill.
Finished this 300-calorie-burning treadmill routine from Fitness Magazine in 20 minutes. Aaaaand…followed up with another 20 minutes on the elliptical.
When I came back, I made a creamy, skinny alfredo pasta dish with whole wheat penne, mushrooms, and peas. It’s a meatless dish, but really satisfying for a cold, snowy day!
I know whole wheat pasta might not be for everyone, but I happen to like it. Plus, there’s 17 g of protein per serving! I’m all about protein as you can probably tell by now :)
A handful of red seedless grapes after dinner, too.
