In case you’ve just tuned in, every Wednesday I share some of the foods I eat in a day. Thanks to Jenn at Peas and Crayon for hosting What I Ate Wednesday!
Howdy, this week is really zooming by. It’s Wednesday already! This week for WIAW, I am sharing a recap of my day yesterday. Umm, I was a snacking MACHINE yesterday. When my sleep pattern gets out of whack, my appetite usually follows suit. My day started super early since I had to attend a 7am meeting at my company’s Jersey City office.
I had three hour-long meetings back to back, so there was no time for a proper breakfast.
Mojo Fruit and Nut bars to the rescue! Salty, crunchy, and nutty – these bars are addicting!
A strong coffee which is far and few for me these days helped me stay awake and alert. Today I tried the Christmas Blend, which is bold Sumatra coffee with sweet and spicy notes.
At least it came with a good view!
By 10am, I was famished so I snacked on an apple with raw almond butter. I love these individual nut butter packs!
I feel like there was something else I was crunching on too. Oh yeah, that’s snack number three: oatmeal raisin chocolate chip dipped cookie. Dare you say that five times :D
I didn’t bring lunch today, so I made my way to the cafeteria to scope out the menu. The cafeteria offers standard fare like soups, sandwiches, salad bar, and hot foods. There are also sushi platters, made-to-order sandwiches and salads, raw veggies bar, pizza bar, and a special dish of the day (today it was unagi don and miso soup).
Since I had been snacking all morning, I decided to keep it healthy and well-balanced. On my plate, I’ve got a portion of multi-grain rice, two pieces of rotisserie chicken breast, spring salad mix, crunchy string beans, black olives, carrots, chickpeas, and blue cheese, topped with a drizzle of low-fat Italian dressing.
They also have a fro-yo machine with lots of toppings to choose from and…a dessert table. *big gulp* I restrained myself though!
After work, I got home, changed into my workout clothes, and busted out a short and sweet treadmill workout (I’ll share more on that with you tomorrow…plus, another giveaway to keep you eating healthy). Got cleaned up quickly and out the door for a dinner with my friends at Uva, a cute Italian restaurant/wine bar.
I ordered a pasta dish as I always do at an Italian restaurant. Cavatelli with creamy pesto sauce and shaved ricotta was rich, satisfying, and well deserved after a workout :)
Aaaand…that’s all I ate.
