This cold and refreshing Watermelon Mojito Salad with flavors of lime and mint is the perfect way to enjoy summer!
Continuing the mojito theme, I’ve got a salad with nothing more refreshing than watermelon. I’m on a watermelon kick lately and rightly so because it’s been over 80 degrees this past weekend!
Whenever we host barbecues, watermelon melon slices seems to be included on the menu by default. In fact, growing up, whenever my family was spending a day at the beach, watermelon was always in our cooler. It’s the perfect thirst quencher!
Well, how about something a little different, yet just as refreshing?
This salad brings together the refreshing flavors of sweet watermelon, fresh mint, and tangy lime. It’s perfect for a summer picnic and easy enough to double or triple the recipe to bring to a potluck, pool party, or barbecue.
It TOTALLY hits the spot.
Once this salad is made, it can keep in the refrigerator for several hours. However, if you’re not serving it right away (for example, if it’s going to sit in a cooler for a while), you can prepare the dressing on the side, and then drizzle it over the watermelon slices right before serving.
Watermelon Mojito Salad
Ingredients
- 1/4 cup fresh lime juice
- Zest of a lime
- 2 tbsps honey
- 10 fresh mint leaves finely chopped
- 1/2 medium seedless watermelon rind removed and sliced
Instructions
- In a small bowl, whisk together lime juice, lime zest, honey, and mint.
- Pour mixture over watermelon slices and toss gently until evenly coated.
- Keep refrigerated until ready to serve.
