Happy Monday, friends! How has your week been going? I know I haven’t done a Meatless Monday post in a while, but today I’ve got a delicious and satisfying dish with an Asian twist: Spicy Sesame Carrot Zucchini Noodles. Visit us drssa for more spicy dishes.
This side dish couldn’t get any easier – you just have to whip up the dressing and toss everything together in a bowl! It’s also very versatile because you can serve them chilled like a salad, or warm for a side dish. You can even add a protein such as grilled chicken, shrimp, beef, or even tofu.
This veggie side dish combines lots of flavorful ingredients like nutty sesame oil, creamy tahini (you can substitute with peanut butter or almond butter), garlic and spicy sriracha for a perfect blend of sweet and savory flavors, mixed into strands of carrot and zucchini noodles and topped with crunch peanuts. Spicy Sesame Carrot Zucchini Noodles
Ingredients
- 1 1/2 tbsps reduced sodium soy sauce
- 1 tbsp tahini
- 1 tsp sesame oil
- 1 tsp rice wine vinegar
- 1 tsp honey
- 1 clove garlic minced
- ½ tsp sriracha more or less to taste
- 6 oz Green Giant Veggie Spirals™ Carrot
- 6 oz Green Giant Veggie Spirals™ Zucchini
- 1/2 cup cooked edamame
- 1 tsp sesame seeds toasted
- 1/4 cup chopped peanuts
- 1/2 cup chopped cilantro
Instructions
- In a large bowl, whisk together soy sauce, tahini, sesame oil, rice wine vinegar, honey, garlic, and sriracha.
- Cook Green Giant Veggie Spirals™ Carrots and Zucchini according to the package directions. Drain well. Add veggie noodles and edamame to the bowl, and toss to combine with dressing.
- Garnish with sesame seeds, peanuts, and cilantro. Serve at room temperature or chilled.
