Pina Colada Green Smoothie

 This tropical Pina Colada Green Smoothie is made with pineapple, coconut, and a dose of healthy greens.  Cool, creamy, delicious – it’s perfect for breakfast or as an afternoon pick-me-up.

I hope you had an amazing weekend!  I say we kickstart the day with a really good and yummy green smoothie.

I first tried a variation of it from my local juice bar and thought about it way too much for days after. It’s totally delicious, with flavors reminiscent of a frozen pina colada, with creamy coconut and sweet pineapple blended into an island-inspired drink.

I knew I had to make my own version but decided to tweak it a bit in order to sneak in a little extra greens.

I use both coconut milk and sweetened coconut flakes for both texture and sweetness. Sometimes when the fresh pineapple chunks are on the ripe side, then there’s no need to add honey as a sweetener. You can also use agave syrup or your choice of sugar alternatives.

I love that it has just the right amount of sweetness, tastes refreshing, and is packed with nutrients to get me through the morning.

Oh, and a great pre or post workout drink too (blended with a scoop of unflavored and unsweetened protein powder – this is my favorite)!

I know some people shy away from green smoothies because of the way it appears to taste…maybe too healthy?

But give this Pina Colada Green Smoothie try and I’m sure you’ll be surprised. You won’t even be able to taste the added greens!

Piña Colada Green Smoothie

Ingredients

  • 2 cups fresh or frozen pineapple chunks
  • 2 cups coconut milk
  • 1/4 cup sweetened coconut flakes
  • 1 tbsp honey optional
  • 1/2 cup ice cubes or more if needed
  • Handful of baby spinach or kale

Instructions

  • Place all of the ingredients in a blender and blend until smooth. Serve cold.

Notes

*For the layered effect, blend smoothie without the greens, pour half into glasses, and blend the remaining smoothie with greens.
