Pesto and Ricotta Eggs with Ham is my version of “Green Eggs and Ham” which takes only 5 minutes to make!
I had all intentions of posting a dessert recipe today, but then I realized that it’s only three weeks into January and I’ve already posted two dessert recipes. Oops! Guess I’ll save my third one for later this week. ;)
At any rate, you’ve got to try this Dr. Seuss-inspired breakfast sometime: Pesto and Ricotta Eggs with Ham, aka Green Eggs and Ham. (Why, Sam I Am, I do like green eggs and ham!) This was absolutely delicious, and took about five minutes to make. Here’s how I did it:
I cracked one egg plus two egg whites into a bowl, and whisked them up with salt, pepper, a scoop of ricotta cheese, and a spoonful of basil pesto to give it that green hue of course.
Scramble up in a non-stick skillet over low heat.
One toasted whole grain bread and a few slices of ham later, I had an easy, breezy breakfast egg sandwich. This is honestly one of my favorite loaves of whole grain bread. What really sold me was the fact that there are 7 grams of fiber and no high fructose corn syrup. It has a slightly sweet, nutty taste, and is studded with black and white sesame seeds…particularly phenomenal slathered with almond butter!
This egg sandwich explodes with fresh, bright flavors from the basil pesto and the salty bites from the ham. I used Serrano ham because I had that in my fridge, but you can also use proscuitto or deli ham.
And the ricotta cheese! Have you ever added ricotta cheese to your eggs? It make them cheesyand gives them a creaminess that is usually missing when you are substituting egg whites for whole eggs.

Pesto and Ricotta Eggs with Ham
Ingredients
- 2 eggs I used 1 whole egg and two egg whites
- 1 tbsp ricotta cheese
- 1 tsp basil pesto
- Salt and pepper to taste
- 2 slices proscuitto or ham
- 1 slice bread toasted
- Cooking spray
Instructions
- In a small bowl, whisk together eggs, ricotta cheese, pesto, salt, and pepper. Cook eggs in a nonstick skillet coated with cooking spray over low heat, stirring constantly until desired doneness.
- Remove from heat, and serve over ham and toasted bread.
