Make this tuna quinoa salad loaded with farm fresh vegetables and Mediterranean flavors for a delicious, refreshing lunch or dinner!
I know a lot of you have set your healthy eating goals for the new year and are hopefully sticking to them. For some people it means cutting back on sweet treats and for others it means trying to eat more veggies. Many of you are aiming for more physical activities or exercising portion control. My goal is to eat as clean as possible, and fill up on good, wholesome food!
One of my favorite lightened up meals is a big bowl salad made with tons of chopped crunchy veggies and tossed with light olive oil vinaigrette. I thought I’d throw in a little extra protein today to make this into a hearty, well-balanced meal suitable for lunch or dinner!
You know how mason jar salads have taken over the Internet? You can absolutely arrange this salad in a mason jar, and you’ll have an amazing meal ready and waiting for you in the fridge. Just add the dressing first, then layer tuna chunks, quinoa, vegetables, olives, and feta cheese on top. When you’re ready to serve, pour the salad into a big bowl, toss, and enjoy!
I went for all the classic Mediterranean flavors, but feel free to use whatever vegetables look fresh at the farmer’s market or grocery store. I also kept things gluten-free by using quinoa (you can use red or white). For non gluten-free version, you can substitute with other whole grains like couscous, farro, and barley.

Mediterranean Tuna Quinoa Salad
Ingredients
For the dressing:
- ¼ cup olive oil
- 1 tbsp balsamic vinegar
- 2 tbsps fresh lemon juice
- 1 tsp Dijon mustard
- ½ tsp dried oregano
- Salt and pepper to taste
For the salad:
- 2 cups cooked quinoa
- 2 plum tomatoes diced
- 1 small red onion diced
- 1 large cucumber diced
- 1 green bell pepper seeded and diced
- ½ cup kalamata olives pitted and sliced
- ½ cup feta cheese crumbled
- 12 oz can Bumble Bee solid white albacore in water drained, in chunks
Instructions
- In a bowl, whisk together dressing ingredients until well blended. Season with salt and pepper to taste.
- Place salad ingredients and dressing in a mixing bowl and toss gently to combine. Refrigerate until ready to serve.
