Over the summer when we were on vacation in Greece, we had a baked feta appetizer that was so simple yet delicious Once feta cheese is heated through, it softens and the texture becomes less crumbly and more creamy and spreadable. Well, after I came home, I decided I needed to recreate the amazing dish we had. So here it is, this great recipe for Mediterranean Baked Feta with Olives!

This dip is perfect for potluck, tailgating, dinner parties…..do you see where I am going with this?  What I am trying to say is, this baked feta dish is a must for any social event, especially as an appetizer or snack for holiday entertaining! 

Just looking at this Mediterranean Baked Feta with Olives has me wishing it were actually in front of me, and not this computer.  Oh and did I mention how easy it is to make this appetizer? 

Hot and bubbly feta cheese, marinated olives, and a roasted garlic olive oil mixture really come together perfectly to make this Mediterranean Baked Feta with Olives. It is so good, I bet it won’t last more than a few minutes after you set it out at your next party. Trust me on that one…

With just a handle of ingredients and a few simple steps, these flavor-bombs will be ready to be devoured at your next holiday party!

To take this baked feta dish to the next level, I used Better Than Bouillon Roasted Garlic Base, which is a paste concentrate that is equivalent to a bouillon cube or broth. I love that you can easily spoon right out of the jar and don’t have to dissolve it like traditional bouillon cubes.

Also, if you’ve made roasted garlic before, you’ll know that it takes an hour or two in the oven to get that sweet mellow garlic flavor. Just a teaspoon of Better Than Bouillon Roasted Garlic Base adds a robust roasted garlic, “cooked all day” flavor to your favorite holiday dishes.

Some tips on making this baked feta appetizer

  • Good quality feta will make a big difference in the final results. I like the feta that comes in a container of brine as those taste fresher than the ones that come in vacuum sealed container.
  • Place feta block on a dish lined with paper towel for about 10 minutes before using it in the recipe, as it will help absorb the excess brine.
  • You can make different variations of the dish, adding your favorite herbs or spices. For example, lemon zest and fresh rosemary would work really well.

Ingredients

  • 1 8 oz block feta cheese
  • 1/2 cup assorted pitted olives roughly chopped
  • 2 tsps olive oil
  • 1/4 tsp dried oregano
  • 1/2 tsp dried rosemary
  • 1/2 tsp crushed red pepper flakes
  • 1/2 tsp Better Than Bouillon Roasted Garlic Base
  • Fresh black pepper
  • Crackers pita, crusty bread (for serving)

Instructions

  • Preheat oven to 400F.
  • Toss olives, olive oil, oregano, rosemary, red pepper flakes, Better Than Bouillon Roasted Garlic Base, and black pepper until combined.
  • Place the feta in the center of a small overproof baking dish and top with the olive mixture.
  • Bake, uncovered, in the preheated oven until feta is soft, about 20 minutes. Let cool slightly and serve warm with crackers, pita, or crusty bread.
