These buttery sweet churros mini muffin bites have all the flavors of your favorite dessert in the form of baked (instead of fried) mini muffins, and they are so easy to make!
Do you ever have those days where you want something sweet for breakfast rather than a savory breakfast of bacon, eggs, and toasts? I sure do. Normally when I want a sweet breakfast, I turn to my trusty muffin and pancake recipes.
And since Hispanic Heritage Month is in full swing, I was inspired to create a breakfast recipe inspired by my favorite Latin treat: churros!
Churros are fried pastry dough covered in cinnamon sugar — they’re crunchy on the outside and soft on the inside and just so addicting!
If you love churros, I think you’re going to love these Churros Mini Muffin Bites not only because they’re incredibly delicious, but also because of the simplicity of the recipe. There’s no deep frying involved, and all you need is a mini muffin pan.
The results are these muffins that are warm and soft inside and are rolled in a cinnamon sugar mixture. You can jump behind a recipe like this, right?
Once the muffins come out of the oven, let them cool slightly. Meanwhile, get your melted butter and cinnamon sugar ready. Dip into melted butter and then roll in the cinnamon sugar. Super easy!
I’m not going to lie, lots finger licking happened between dips. But no one has to know that part :)
And of course, what’s a better than pairing these churros mini muffins with a cup of coffee to start the day. I love having these churro muffin bites for breakfast or an afternoon snack.
Churros Mini Muffin Bites
Ingredients
- 1 cup all-purpose flour
- 1/4 cup sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 large egg
- 1/2 cup milk
- 2 tbsps vegetable oil
- l tsp vanilla extract
For the cinnamon-sugar coating:
- 1/2 cup sugar
- 1 tsp ground cinnamon
- 6 tbsps unsalted butter melted
Instructions
- Preheat oven to 350F. Grease 24 mini muffin pan with cooking spray. In a large bowl, whisk together flour, sugar, baking powder, baking soda and salt. In another bowl, whisk together egg, milk, vegetable oil, and vanilla. Add the wet ingredients into the dry ingredients and stir until the mixture is well combined. Scoop rounded tablespoons of batter into the greased muffin tins, about full. Bake until a toothpick inserted into the center of the muffin comes out clean, about 12 to 15 minutes. Allow to cool slightly in pan before removing them from the pan. Whisk together sugar and cinnamon in a bowl. Dip each muffin in the melted butter then toss in cinnamon-sugar mixture until well coated.
Made these today for Cinco De Mayo after dinner desert and they are delicious!!
Followed the recipe exactly and the mini bites were much tastier than had expected. They made exactly 24 n rose well!! Lightly crispy exterior and the cinnamon mix was a perfect finish. Thank you for the recipe!
