  • 2 garlic cloves minced
  • 1 tsp freshly grated ginger
  • 1 tsp lemongrass paste
  • 2 tbsps brown sugar
  • 1/2 tsp ground turmeric
  • 2 tbsps fish sauce
  • 2 pounds skinless boneless chicken breasts or thighs, cut into 1-inch pieces
  • Bamboo skewers soaked in water
  • Cilantro leaves and lime wedges for serving

For the peanut sauce:

  • 1 tsp vegetable oil
  • 3 cloves garlic minced
  • 3 tbsps hoisin sauce
  • 3 tbsps creamy peanut butter
  • 1 tsp sambal chili paste more to taste
  • water as needed

Instructions
