Blueberry Buttermilk Waffles

Crispy, buttery, and fluffy blueberry buttermilk waffles filled are the best way to start the day! This is a tried-and-true recipe you will turn to again and again.

Waffles are a comfort food for me. Breakfast, lunch, or dinner, they are guaranteed to make me happy. Waffle is not an every day food for us, but it does have the ability to make an ordinary day extra special. Blueberry Buttermilk Waffles have become one of the breakfasts that I crave the most often.

I am always tempted to order them from restaurants and I must admit that eating just one waffle is never enough. When I make it at home though, I almost always double the batch so that we can have seconds and enough to freeze for another breakfast.

These waffles are amazing and fit for all occasions, whether it is a breakfast on a lazy Sunday morning, or when you have guests over for brunch for the holidays. There is nothing better than having these blueberry buttermilk waffles and hot coffee on a cold winter morning. Bursting juicy blueberries along with all those crispy waffle pockets to hold the warm maple syrup? Yes, please!

Any waffle iron (stovetop or electric) can be used to make this recipe. Be sure to follow your waffle iron manufacturer’s instructions before using it. Also, make sure you coat the waffle iron really well with nonstick cooking spray or shortening to prevent sticking. 

Here are the ingredients requires for this Blueberry Buttermilk Waffle Recipe

  • All-purpose flour – you can also substitute half of the amount with whole wheat flour
  • Baking powder
  • Sugar
  • Salt
  • Melted (unsalted) butter
  • Buttermilk – if you don’t have buttermilk on hand, you can make your own by adding 1 tablespoon lemon juice or white vinegar to 1 cup milk. Stir and let it sit for 5 minutes before using
  • Eggs
  • Vanilla extract
  • Blueberries – fresh or frozen work. If you use frozen blueberries, you can just use them as is. There is no need to thaw them before folding into the batter

How to make Blueberry Buttermilk Waffles

Preheat the waffle iron. Stir together the flour, salt, baking powder, and sugar. Add the buttermilk and eggs and stir to combine. Add the melted butter, vanilla extract. Stir to combine.
Stir in the blueberries and then pour onto the hot waffle iron. Cook until lightly browned. 

How do you prevent the waffles from sticking to the waffle iron?

As some of the blueberries will burst while cooking, the potential for waffles to stick to the waffle iron is there. I recommend greasing the waffle iron generously with butter or shortening between each waffle or coating it with cooking spray.

Can you make ahead and freeze these waffles?

Yes! If I know I will be freezing them for another meal, I like to undercook them so the waffles are just lightly golden. Let the waffles cool completely, before storing them in an airtight freezer bag. My favorite way to reheat the frozen waffles is in a toaster oven until they become golden brown and crispy, but you can also reheat in the microwave.

How do you serve these waffles?

You can serve these with maple syrup, a dollop of vanilla yogurt or whipped cream, a pat of butter, or powdered sugar. You can even serve it with a scoop of ice cream for dessert!

Ingredients

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 tbsp sugar
  • 2 cups buttermilk
  • 2 large eggs room temperature
  • 1/2 cup unsalted butter melted
  • 1 tsp vanilla extract
  • 2 cups fresh blueberries

Instructions

  • Whisk together the flour, baking powder, salt, and sugar in a large mixing bowl.
  • Whisk together the buttermilk, eggs, melted butter, and vanilla extract in another bowl, and stir into the dry ingredients until well combined. Gently fold in blueberries.
  • Coat the waffle iron with nonstick spray. Pour about 1/2 cup of the waffle batter into the waffle iron (more or less depending on the size of your waffle iron) and cook until the waffles are golden brown and crisp.
  • Serve warm.
