These Baileys Irish Cream Chocolate Brownie Cookies are rich and fudgy with the taste of Baileys Irish Cream. They are everything you love about brownies but in cookie form!

Once the month of December rolls around, I start to think about what special treats I want to make for Christmas. These past few weeks have been fun but super busy. Somehow this holiday season has really crept up on me, and I’ve hardly even watched any of my favorite holiday movies or listened to any Christmas music so far. I’m going to try to take a minute to just breathe…to stop and smell the roses. Or in this case, a batch of freshly baked Baileys Irish Cream Chocolate Brownie Cookies.

I was in need of some holiday desserts, so I created these gorgeous, and super delicious Baileys Irish Cream Chocolate Brownie Cookies! These cookies taste like thick, fudgy brownies, yet somewhat crumbly.

This is the perfect recipe to add to your holiday cookie trays, or bring to a cookie exchange, or for St. Patrick’s Day celebration… just be sure to save a few for yourself.

The best way to enjoy these cookies is while they’re still warm with a glass of milk or a cup of Irish coffee!

Tips for making the best fudgy cookies

When your cookies come out the oven, the edges should be set but the centers should be soft and even just a hint under-baked. After I take them out of the oven, I let them cool on the baking sheet for a couple of minutes, then transfer to a wire rack to cool completely. That’s the trick to getting that nice fudgy texture inside. If you overbake them, the cookies will become quite firm and crispy.

Can I freeze these cookies?

Yes, you can freeze these brownie cookies. Once the baked cookies come to room temperature, place in an airtight container. Place cookies in layers separated by sheets of waxed paper so they don’t stick together. When ready to thaw, simply let the cookies come to room temperature.

Can I freeze the cookie dough and bake later?

Yes, unbaked cookie dough can also be frozen for up to 3 months. Make the dough and wrap in plastic wrap. Place wrapped dough in a zip-top freezer bag and seal. When ready to bake cookies, let dough thaw at room temperature, and and bake as directed below. 

How long do these cookies last?

These Baileys Irish Cream Chocolate Brownie Cookies will last 5 to 6 days at room temperature in an air-tight container.

For this recipe, I incorporated Baileys baking chips for that Irish cream liqueur flavor. These baking chips are non-alcoholic, which makes this recipe kid-friendly. If you can’t find the baking chips, you can also add 1/2 teaspoon of Irish cream extract to the batter.

 

Baileys Irish Cream Chocolate Brownie Cookies

Ingredients

  • 1/2 cup unsalted butter melted
  • 1 egg
  • 2 tsp vanilla
  • 1/4 cup white sugar
  • 3/4 cup light brown sugar
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsweetened cocoa powder
  • 1 1/3 cups all purpose flour
  • 1/3 cup Baileys Irish Cream baking chips

Instructions

  • Preheat oven to 350F. Line cookie sheets with parchment paper.
  • In a mixing bowl, whisk together melted butter, egg, vanilla, while sugar, and brown sugar.
  • Add the baking powder, salt, cocoa powder, and flour. Stir until a dough forms and fold in the baking chips.
  • Scoop out 1-2 tablespoonful of dough with a cookie scoop, press lightly to flatten a bit, and place onto prepared baking sheets.
  • Bake for 10-12 minutes until the cookies are set around the edges and still soft in the centers.
  • Allow to cool on the cookie sheet for 10 minutes before transferring to wire racks to cool.
