My go-to smoothie move is a no-brainier: throw a bunch of frozen berries, a big dollop of yogurt, and a splash of juice into the blender and give it a whirl. This time, I got the hankering to put in some pomegranate seeds (I’ve been de-seeding pomegranates like crazy lately after discovering a hack…more on that later) and apple, which resulted in a vitamin-rich, protein-filled and absolutely refreshing smoothie variation!
Pomegranates are packed with antioxidants and vitamins. Much of the nutrients are contained in the seeds, so it is a good idea to use the whole fruit if possible. Still, if you don’t care for the texture, you can use pomegranate juice instead.
Give your blender a workout while getting your daily recommended fruit servings in.
Pomegranate was never a favorite fruit of mine. The sheer amount of time and effort needed to extract the arils was just not worth it for me. Then, I saw this YouTube video a friend had posted on Facebook: Check it out if you find it tricky (and messy!) to pry out those juicy seeds from a fresh pomegranate! It will splatter slightly, so be a little gentle when you’re whacking the fruit.
Apple Pomegranate Smoothie
Ingredients
- 1 apple peeled, cored, cut into chunks
- 1 cup pomegranate seeds
- 1 cup plain Greek yogurt
- Splash of skim soy, or almond milk
- 4-6 ice cubes
- Honey or agave syrup to taste (optional)
Instructions
- Place all ingredients in a blender and blend until the desired consistency is reached. Pour into two glasses. Serve immediately.
Looks yummy and super healthy! I’ve always been intimidated by pomegranate, are you supposed to eat the rough seeds?
Yes, they are totally edible – I don’t mind them much. Some people like to chew and spit out the tough seeds. The option is yours!
I’m always trying to grab whatever (unhealthy) snack I can find post workout, this would be the perfect healthy drink!
