This homemade chimichurri sauce is bursting with fresh, zesty flavors — it will definitely be your family’s new favorite!
It seems that the days are getting shorter and dinnertime can really sneak up on me. For those of you who are constantly on-the-go or busy parents slowly settling into back-to-school routines, what easy meal ideas do you have up your sleeves?
Back-to-school meals don’t have to be complicated at all and can even be a little exciting. Whip up this bright, flavorful Easy Chimichurri Sauce to be drizzled over some rotisserie chicken and you’ve got dinner on the table in less than 5 minutes!
My favorite South American restaurant serves this green sauce over grilled chicken and I just love it! The sauce is made of super simple ingredients, but when blended all together they create the most amazing zesty, savory flavor. The sauce infuses everything it touches with so much flavor.
Easy Chimichurri Sauce
Ingredients
- 1 cup fresh cilantro
- 1 cup fresh parsley
- 1 shallot diced
- 2 garlic cloves minced
- 1 tsp dried oregano
- ¼ tsp red pepper flakes optional
- 2 tbsps red wine vinegar
- 1 tbsp lime juice
- ½ cup olive oil
- Salt and pepper to taste
Instructions
- Add cilantro, parsley, shallots, garlic, oregano, red pepper flakes, red wine vinegar, and lime juice to a food processor.
- Pulse until the ingredients are coarsely chopped, then slowly drizzle in olive oil and blend until just combined. Season with salt and pepper to taste.
- Serve immediately, or cover and refrigerate for up to 3 days.
I took a shortcut by picking up a rotisserie chicken meal which comes with a 2L Coca-Cola product and a 2lb side dish (you can choose from potato salad, macaroni salad, or cole slaw) at the deli section of my local Walmart. It was super easy to find with the in-store Effortless Meal signs and deals near the deli counter. Other grab-and-go Effortless Meal options are take ‘n’ bake pizzas and sandwiches – all convenient, fresh, and tasty meal solutions for families!
I like to use rotisserie chicken because it’s an easy way to create a delicious meal around it when the most time consuming step has already been done for you. Then all I have to do is just give it my own spin for any meal I make. Sometimes I even make chicken noodle soup with it — it just adds a ton of flavor!
