In case you’ve just tuned in, every Wednesday I share some of the foods I eat in a day. Thanks to Jenn at Peas and Crayon and Meghan at Clean Eats Fast Feets for hosting this week’s What I Ate Wednesday!
Sometimes when I have one type of food too many days in a row, I get really sick of it and need to wait a few months before I want to eat it again (read: tuna melt, which I made and ate almost every other day last month). But I don’t think I can ever get sick of granola and yogurt! Today began with a bowl of mango Greek Yogurt and homemade granola.
I flavored my yogurt by mixing plain 0% Fage Greek yogurt with sweet mango cubes and a drizzle of honey. I like to use frozen mango instead of fresh ones because once thawed, it releases some mango juice and has that soft “fruit-on-the-bottom” texture.
On my way to work, I stopped by Starbucks for a cup of coffee. Blonde roast is my go-to coffee order but I’ll occasionally spring for an Americano if I’m in the mood for espresso.
Did you know that coconut milk is now on Starbucks menu?! I didn’t and was curious — I tried it with my coffee today and honestly couldn’t taste the difference. It’s a great option for those with soy or dairy allergy, but if you’re a coconut lover, don’t get too excited. It’s slightly sweet but isn’t all that coconutty.
By noon, I was more than ready for lunch. Since the day was so beautiful, I took a long walk to my favorite Vietnamese sandwich shop (it’s been around since 1989!) and ordered a special bahn mi. I like it extra spicy with lots of cilantro :)
I knew I was going to be heading to the gym after work so in the afternoon, I had a Kit’s Organic Cashew Bar with a cup of jasmine tea. Just like other Kit’s Organic bars, this one’s got cashews, almonds, dates, and a sprinkle of sea salt – that’s all. This stuff is great for pre-workout snack! After work, I headed to the gym to get my run in. Once home, dinner was an easy fix. On Sundays, I like to prep foods for the week so that I’ll have some healthy meals ready anytime. If I decide to eat out or can’t finish them that week, I’ll freeze them for later. It’s like DIY Lean Cuisine, except you know exactly what goes in.
Anyway, for this week, I’ve got some turkey sausage patties with steakhouse mushrooms and ranch roasted carrots on the side. I was so excited about the sides – they’re easy to make and just delicious!
That’s all I’ve got today! I feel as though a Tropical Papaya Smoothie might be making an appearance later …it’s great stuff! :)
I don’t think I can ever get sick of yogurt either!
Bahn mi is one of my favorite meals! I just moved and need to find a good place here… it’s been too long!
