This has been another one of those weekends where my plans are out the window and I don’t know if I’m coming or going.  I am ready to kick back and relax with a Frozen Mango Coconut Margarita.  I have a growing list of posts that I need to write and today I’m sharing a beverage I know you’ll love.  In Mexico and many Catholic communities around the world, those who have passed on are remembered and celebrated every year during Dias de los Muertos (Day of the Dead) on November 1st and 2nd.  The annual celebration include lively music, colorful costumes, altar decorations, traditional food, and tequila.  Casa Noble sent me their Crystal Tequila Blanco, which inspired me to create a frozen drink recipe for Dias de los Muertos.

James and I have been making frozen margaritas at home every so often, but this time, I took the classic combination of tequila and lime and added some tropical flavors to make it extra good! The tequila is smooth, well-balanced, with notes of citrus, mango and pepper, so I decided to add some mangoes and coconut to the mix.

To make my Frozen Mango Coconut Margarita, I use frozen mango chunks. You can use fresh mangoes too, but I like my drink to be as concentrated as possible, so I usually avoid blending a frozen drink with ice cubes. Add some coconut milk, coconut water, lime juice, tequila, triple sec (cointreau also works too), and blend away. Pour the frosty cocktail into a glass, serve it alongside some carnitas tacos with guacamole and you have the perfect offering for your fiesta.

For now, I’m off to finish my drink and perhaps make another one. Enjoy the rest of your weekend!
