Fresh Pineapple Salsa is an excellent topping for grilled fish or chicken. The best fruit salsa to make all summer long!
It’s finally Friday…the 13th…! Has it been a busy week in the sports realm or what? It’s an exciting time, and for me, snacks and game watching come hand in hand. Earlier this week, I got box seat tickets to Citi Field (company perks!) and one of the best parts other than the view is the stadium food buffet.
I piled my plate high with hot dog, fries, few lettuce leaves (I tried), and homemade potato chips. During the third inning, a box of Shake Shack burgers was delivered to our suite! How can you say no to Shake Shack cheeseburgers? You can’t! By the seventh inning, more snacks…pretzels and cheese dip, with a plate of warm cookies. I tried but it was a lost cause.
The truth of the matter is that we don’t eat like that all the time. Most of the time, I keep it on the light side when it comes to snacking.
Homemade salsa is no doubt a delicious snack that you can nosh on without feeling guilty afterwards. And the options are endless, too; make pico de gallo with fresh tomatoes, make salsa verde with blackened tomatillos, or make a fruit salsa with fresh pineapple for a colorful, refreshing condiment.
Fresh Pineapple Salsa is sweet, spicy, tangy, and packed with the perfect crunch. I absolutely love this combination of pineapple, red onion, cilantro, lime, and jalapeno. The jalapeno is optional (it’s on the mild side if you use one), but if you can take the heat, feel free to use more than one.
Serve it as a dip with tortilla chips, or you can whip up a batch and keep it in the refrigerator to spruce up some grilled mahi mahi or skirt steak for a quick weeknight dinner. It’s actually best when made ahead and allowed to chill for at least an hour before serving — it really helps to develop the flavors!
Fresh Pineapple Salsa
Ingredients
- 1 cup fresh pineapple diced
- ¼ cup red onion diced
- 1 jalapeno pepper seeded, finely chopped
- ¼ cup fresh cilantro leaves finely chopped
- 1 lime juiced
- Sea salt to taste
Instructions
- In a large bowl, mix all ingredients and season with salt to taste.
- Serve immediately, or refrigerate until ready to serve.
- Serve with tortilla chips or on top of fish, chicken, or beef.

Made it over the weekend for a BBQ, and people just slathered it all over their grilled chicken. Love this recipe!
