Can we all agree that we’re ready for a little sweetness in our lives? Yes? Great! While most Halloween recipes revolve around desserts and party foods for evening festivities, I’ve come up with something so tasty that you can enjoy first thing in the morning. By the way, no judgment if you start your day with some fun size candy bars on Halloween because I may have done that far too often after “stocking up” on candies for Halloween trick-or-treaters.
This Baked Chocolate Coconut French Toast casserole came to me in a flash of pure genius. Okay, maybe it was more like pure hunger, but either way, I imagined incorporating my favorite Halloween candies in the form of a breakfast and here’s what I came up with: a great Halloween morning surprise for adults and kids alike!
It’s rich, indulgent and most importantly, easy to make (and serve). I’ve made a lot of baked French toast, but in this version, I was inspired by my favorite chocolate coated coconut and almond candies. And guess what? It turned out pretty darn amazing.
This french toast recipe starts with King’s Hawaiian Original Dinner Rolls, which give the french toast a delicious, soft and fluffy texture. I often use these rolls for dinner, but they also work really well in sweet dishes.

Baked Chocolate Coconut French Toast
Ingredients
- 1 package King's Hawaiian Original Dinner Rolls cut into bite sized pieces
- 1/2 cup chocolate chips
- 1/4 cup coconut flakes
- 1/4 cup almonds chopped
- 3 large eggs
- 1 cup milk
- 1 tbsp brown sugar
- 1/2 tsp vanilla extract
- ¼ teaspoon salt
Instructions
- Preheat the oven to 350ºF. Coat a 9x9 pan with nonstick cooking spray.
- Place bread cubes into the bottom of the prepared pan. Sprinkle with chocolate chips, coconut flakes and almonds.
- Whisk eggs, milk, brown sugar, vanilla, and salt in a large bowl and pour mixture over bread, pressing down lightly with your hands to soak it all up.
- Bake for 30-40 minutes or until the casserole is cooked through. Serve warm.
