This creamy feta cheese dip with roasted garlic is easy to whip up and requires only 5 ingredients!
Sometimes a recipe comes along unexpectedly which surprises you in a really good way. Just like this recipe, actually, I discovered this recipe by accident because of the roasted garlic I had on hand. I originally roasted a whole head of garlic and planned to use it to make garlic bread. Once I discovered the loaf of French bread had gone stale sooner than I liked, I quickly switched gear and turned the roasted garlic to better use in this dip.
And it only requires five ingredients! This beyond simple feta dip is so delicious and crowd pleasing, it’s appropriate for any summer gathering.
The trick to adding lots of flavor to the dip is roasted garlic.
If you’ve never tried it before, you’ll be amazed at what roasting does to garlic. It loses the pungent taste, and instead, you get these caramelized garlic cloves with a mellow, savory flavor.
To make roasted garlic, I cut an entire head of garlic lengthwise in half, without peeling off the paper. I then drizzle some olive oil on top, wrap the garlic in aluminum foil and roast in the oven for 45 minutes.
The garlic is done when the cloves become soft and caramelized.
Next is of course putting it into the dip, but you can also use it to make roasted garlic hummus or roasted garlic mashed potatoes, spread on crusty bread, or mash it up and add to dressings and sauces.
Roasted Garlic Feta Cheese Dip
Ingredients
- l whole head garlic
- 1 tsp olive oil
- 4 oz cream cheese softened
- 1/4 cup sour cream
- 4 oz feta cheese crumbled
- Salt and pepper. to taste
Instructions
- Preheat oven to 375F.
- Cut garlic lengthwise to expose the cloves and drizzle olive oil on top wrap in aluminum foil and garlic cloves become soft and caramelized, about 45 minutes. Remove from heat and let cool. Remove garlic cloves by squeezing out from one end.
- Combine with cream cheese, sour cream and feta cheese in a food processor or blender and process until smooth. Season with salt and pepper to taste. Serve with assorted veggies and crackers.
