Everyone is busy these days and as a food blogger I totally get it – so I love coming up with delicious and well-balanced meals for busy weeknights when I’m trying to get dinner on the table quickly. The evening should be about spending time with family and relaxing, and not stressing over what’s for dinner. Today’s recipe is a new twist on the classic Chicken Pasta Bake, updated with fresh caprese flavors – juicy tomatoes, mozzarella cheese, and fragrant basil leaves – all tossed together with savory chicken sausage and pasta. It’s light and flavorful, yet hearty and nutritious.
Chicken Sausage Caprese Pasta
Ingredients
- 1 lb rotini penne, or any medium cut pasta
- 12 oz al fresco Sundried Tomato Chicken Sausage
- 2 tbsps olive oil
- 3 cloves garlic minced
- 2 pints grape tomatoes
- Salt and pepper to taste
- 8 oz fresh mozzarella cheese diced
- 1/2 cup fresh basil chopped
Instructions
- Cook pasta according to package directions until al dente. Drain and set aside.
- Heat olive oil in a large skillet over medium heat and cook sausages until browned on both sides. Let cool slightly and cut into slices.
- Add garlic to skillet and saute until fragrant, about 30 seconds. Add tomatoes and cook, stirring occasionally, until tomatoes burst and release their juices and form a sauce, about 10 minutes. Season with salt and pepper to taste.
- Add cooked pasta and sausages back into the skillet and toss until heated through. Stir in mozzarella and basil and serve immediately.
