Hello there – long time no chat!  I hope those of you that celebrated had an amazing Thanksgiving!  I had been vacationing in Taiwan over the holiday so I completely missed out on the turkey feast and the most anticipated Black Friday shopping this year.  I had forgotten how wonderful it was to eat a full turkey meal with gravy, stuffing, cranberry sauce, and all the trimmings.  And pies!  I have yet to bake a pie this holiday season.

Well, I also missed out on Cyber Monday for that matter.  I had the best intentions of doing some holiday shopping but literally passed out while catching up on an episode of this season’s Top Chef (I am still two episodes behind!)

Boy does it feel good that tomorrow is Saturday!  This weekend will be a busy one for me as I have few items on my checklist: chores around the apartment, trip to the post office, maybe a hair trim, and possibly getting a Christmas tree (we are still deciding whether or not we are going to put up a tree this year).

Following a week and a half of not eating enough fruits and vegetables, I started off this morning with a Blueberry Banana Yogurt Bowl inspired by my Yogurt and Fruit Energy Bowl and topped with Trader Joe’s Ginger Almond Cashew Granola.  I love that the granola comes in big clusters.

For lunch, I packed a super easy and delicious skillet pasta with ingredients you’d find in a lasagna: Italian sausage, marinara sauce, ricotta, parmesan, and mozzarella.  Recipe coming your way!

I also packed a Black Cherry Almond Clif Bar for snacking.

Earlier this week I came home to find a package filled with goodies from Clif Bar!  I have already tried their Cranberry Almond Mojo bar, which is not only gluten-free, but also PACKED with almonds and dried fruits instead of fillers with low nutritional value.  I’ll share my thoughts as I go through trying them.
