Mango nectar and pineapple juice are combined in this refreshing tropical rum punch to achieve the perfect sweet-tart balance.
Last month, James and I spent two lovely weeks in the Caribbean where there was never a dull moment! We had the best time relaxing on white sandy beaches, snorkeling in crystal clear water, exploring the different islands, and enjoying lots of food and drinks of course.
Since coming back, we have been trying to recreate the cocktails we had on our trip. It’s so hard to choose a favorite since I love almost any drink made with tropical fruit juices and rum. But…my favorite concoctions of all: Rum Punch!
Everyone seems to have their own recipe for Rum Punch. Some were frozen, some served on the rocks. Some have a reddish hue and some are more yellow in color. With the many variations of Rum Punch, I decided to create one with the tropical flavor of mango and pineapple.
Refreshing and delicious, sipping on this Mango Pineapple Rum Punch may slip you right into island time and transport your mind to a sunny destination, where you are likely swaying on a hammock with a cooling tropical breeze in the background ;)
For those in NYC, you don’t have to travel to the Caribbean to feel the heat because it is coming to you during Caribbean Week from June 1st to 7th. Caribbean Week is the largest regional tourism event in the New York area, showcasing the sights, sounds, color, culture and unique vacation experiences of the Caribbean.
Are you a fan of rum drinks? Don’t miss the Rum and Rhythm Benefit & Auction on June 5th at 6:30PM in Tribeca 360 (you can order the tickets here) where you can sample the region’s award-winning rums and Caribbean culinary cuisine, enjoy the music, and participate in a fund-raising silent auction to benefit the CTO Foundation for Caribbean nationals pursuing studies in tourism and hospitality.
